“Ruffles,” Leslie Poyourow says. “A lot of dresses have ruffles so [the brides] want fabric-y, ruffle-y looks on their cakes.” That’s one of the trends that the owner of Fancy Cakes by Leslie has noticed in wedding cakes these days.
The 56-year-old baker, who gained fame through food show appearances and star-studded cakes (remember Marc Anthony’s 41st birthday?), continues to churn out fabulous-looking (and tasting) cakes after 16 years in the business, including ones decorated with ruffles, flowers, balloons, birds—or vampires.
Poyourow works closely with each couple—whether they’re ordering a $900 cake or an $8,000 one.
“She sits with you and gets a feel for what you like, what you don’t like,” says Cristina Keating, whose October wedding reception featured 250 cascading cupcakes made by Fancy Cakes by Leslie. “She totally did everything I was envisioning.”
